Livestock is priced on how long it hangs. Past seven days there is a longer chill rate. Wild game carries its own rate.

- What does it cost to process a deer or a hog?
- Wild game processing is $1.50 per pound. That is a different rate from livestock, which is $1.10 per pound chilled seven days or less and $1.30 past seven days. Both rates are on this page.
- Is the game rate the whole cost?
- No. The per-pound rate covers cutting and packing. Sausage, hot link sausage, beef jerky, and survival sticks made from the same animal are priced separately — those rates are on the smokehouse page. Boudin, curing, grinding, and tenderizing are on the additional services list above.
- How do I want the backstrap cut?
- Whole, or butterflied and tenderized. The shop asks that question, so have an answer ready.
- What can the trimmings be made into?
- Pan sausage, link sausage, hamburger, survival sticks, summer sausage, stew, and chili. Sausage carries a minimum — link sausage takes 20 pounds, and pan sausage, summer sausage, and survival sticks take 16. Ask about beef jerky when you call.
- Do I pay the slaughter fee on a deer I brought in?
- Slaughter and disposal fees are charged per animal and are listed for cattle, swine, goat, and lamb. An animal you took in the field is not slaughtered at the shop. Confirm what applies to your animal when you call — the shop quotes it.
- Can I have deer sausage without bringing a deer?
- Yes. Deer sausage is sold by the pound from the shop freezers, priced on the smokehouse page. That is a separate thing from having your own animal made into sausage.
- How will it be packed?
- Vacuum packed. That is how finished cuts leave the shop.
- Should I call before I haul out?
- Yes. Prices can change, and the shop will tell you what it can take and when. Call (979) 843-5211. Open Monday through Saturday, 8 AM to 6 PM, closed Sunday.
- Can I submit the cut sheet online?
- Yes. The order planner walks the same questions, then sends the finished sheet to the shop when you press Send. You can print or download it too, and someone will be in touch within 24 to 48 hours to confirm it.
